Great accompaniment to fish n’ chips, plus it’s super easy, low fat and a little different !!
1. In a small mixing bowl combine the natural yoghurt, parsley and zest of one of the lemons. In a food processor pulse the capers and gherkins until they are all uniform tiny pieces. You don’t want a puree – You want texture
2. Combine this with the yoghurt and lemon zest and stir well to combine. Season with salt and pepper. And Taste!!! If you think it needs more gherkin for sweetness or capers for tartness. Up to you. Sauces are one of those things that are up to individual taste requirements I think.
3. Cover with glad wrap or cling film (depending on what part of the world you live in) and place in the refrigerator until serving. This allows all the flavours to improve.
- If you don’t have any natural yoghurt on hand, don’t stress, whole egg mayo is a winner (it’s even better if it’s homemade mayo)
